ASMI Issues New Fact Sheet on Chalk in Halibut
The Alaska Seafood Marketing Institute has released a new fact sheet on chalkiness in halibut for the trade. The fact sheet provides wholesalers and distributors how to identify it, foodservice and retail buyers how to prepare it, other trade members on what could be causing it. Most importantly, the change in texture is not harmful to consumers or the fish.
